Tilapia Provençal

This is super easy to make (which I love) and is delicious for the whole family. This basic recipe is error-proof. Exact measurements are not required for achieving success. This is my go-to for hectic days when I don't have time for elaborate preparations or extended cooking times.

You Will Need:

Tilapia Filets
Tilapia is a light, mild-flavored fish that has a slightly sweet taste to the meat. It is low in saturated fat, calories, carbohydrates and is a good source of protein.
A Skillet
I use my cast iron skillet often. I also use my WMF pan due to its even heat distribution. However, any pan will do.
Herbes de Provence
Herbes de Provence is a great combination of herbs used to infuse flavor into this fish. Herbes de Provence can be purchased premixed or you can blend your own. The mixture typically contains some or all of these: basil, oregano, thyme, tarragon, parsley, fennel, rosemary, marjoram, sage, savory and lavender flowers.
Cracked Black Pepper
Fleur de Sel
This "flower of salt" is moist and delicate. It contains more mineral complexity than table salt. It sometimes has a gray or grayish-pink hue. This is my most favorite brand to use. It is too delicate to be used during cooking and is best when sprinkled onto the food before serving. If you cannot find Fleur de Sel, you can use regular table salt, kosher salt or sea salt instead.
REAL Butter

How To Make:
In the cast iron skillet over medium heat, melt a pat or two of butter. Brush some of the melted butter onto filets. Place into skillet. Sprinkle enough Herbes de Provence onto fish to cover filets. The blended herbs become fragrant during cooking...an added bonus to the delicious flavor they produce.

Add cracked black pepper to your liking. Cook until brown on bottom. Turn once. Cook until fish is done. It will be opaque and flaky. Do not turn more than once because tilapia is a light fish and will break apart very easily. After plating the fish, add a dash of Fleur de Sel onto each filet. I like to serve this with fresh asparagus. The flavors compliment each other well.

Enjoy your healthy and flavorful meal. I recommend tilapia to my friends that "hate fish". Its mild flavor makes it palatable to those who do not care for that "fishy taste" or for those who have never tried fish before. Like I said, this dish is pretty much error-proof. No need to stress over finding the right pan or salt or real butter. No one has time for that, right? Just use what you have and you'll be fine! With love, from my kitchen to yours.....
